This recipe was altered from Creative Juices Natural Cafe in St. Augustine, Florida
This recipe is great for a once a day morning or mid-day snack to keep you going through out your day!
Makes 45
1 Cup of Peanut Butter (Or Choice of Alternative Butters, i.e. Almond, Sunflower Seed, Cashew, or Pecan)
1 Cup of Honey (Vegan Friendly Alternatives: BEE-FREE HONEY or Coconut Nectar)
1 Cup of Granola
1/2 Cup of Raisins
1/2 Cup of Sunflower Seeds (Or Choice of Nut)
1/4 Cup Chia Seed
1/4 Cup of Flax Seed
1 Scoop of Protein Powder
2 Cups of Coconut Flakes
1 Orange
Begin by adding the Peanut Butter & Honey in a double broiler or microwavable safe bowl until melted into a thick creamy-like substance. If you are using the microwave heat & stir 30 seconds at a time (this will usually take a one minute total).
After the base is heated let it cool for 5 minutes in the fridge while you begin to prep our coconut flakes. Using a convection oven – place the coconut evenly on the pan & toast til golden crispy. Make sure to keep an eye on the flakes to prevent burning.
Take Peanut Butter mixture from fridge & begin to add Granola, Raisins, Seeds, & Powder. Fold until evenly mixed. After mixing – by using a grater create zest into the mix from your whole orange, then mix evenly.
After your mixture is done & your toasted coconut has cooled start to creative small bite-sized balls from the mixture & evenly coat with the toasted coconut.
Refrigerate balls when done.
