Vegan Chocolate Pudding

 

Almond Milk or Choice of Milk

½ Cup of Sugar

⅓ Cup of Unsweetened Cocoa Powder

¼ Cup of Cornstarch

⅛ Tsp Salt

2 Cup of Unsweetened Almond Milk

1 Tsp Vanilla Extract

1 Scoop of Vegan Protein Powder

 

Sift together sugar, cocoa, cornstarch, and salt. In a saucepan – add dry mix & whisk in almond milk or choice of milk until no lumps remain.

Over medium heat, bring mixture to a boil, whisking occasionally to ensure nothing sticks to the bottom. Boil for two minutes, whisking constantly, until mixture thickens – add vanilla.

Pour into muffin tins for portion sized poppers or large lidded container & cool for two hours.
